Patagonian Lamb Racks

How do I cook Lamb racks?

Don't worry, these are the easiest little things to cook and are impressive at any meal. Meat is almost never served blue/rare in Argentina as the flavour comes out as the meat is cooked, pink in the centre is perfect. Prod the meat with your finger to make sure its soft and you can always slice a little slither off the end, not only will this show you how rare your lamb is but its a tasty little morsel to nibble on whilst nobodys watching!

Defrost the lamb and then cover and leave out so you cook the lamb from room temperature. Place the oven on at 190C and then cook the lamb for 40-45 minutes. I sometimes cook them for 35 minutes and then finish them off under a hot grill for 5 minutes, turning them once so the skin goes crispy.

Look out for other recipies as there is so much you can do with our lamb racks, such as herb crusts and other culinary joys. But for me  nothing really beats the simplicity of a little salt and pepper and the flavour of great tasting meat.
